Delicious chicken breasts that taste creamy and rich, but are healthy and protein-packed thanks to Greek yogurt! The Greek yogurt also keeps these chicken breasts nice and juicy.
Marinating the chicken breasts is not mandatory; if you are in a rush, it is fine to simply place the chicken breasts on the baking pan and cover with yogurt mixture!

Parmesan-Greek Yogurt Chicken Breasts
Ingredients:
- 3 large chicken breasts, sliced in half or pounded thin with a meat mallet
- 3/4 cup plain low-fat Greek yogurt
- 5 tbsp Parmesan cheese
- 2 tsp chopped garlic
- 1 tsp garlic salt
- Pinch of salt and pepper
Instructions:
- Preheat oven to 375 degrees
- Spray a baking pan with cooking spray (olive oil preferred)
- Mix yogurt, seasonings, garlic, cheese
- Trim fat from chicken breasts and place in large Ziploc bag, large enough to fit all chicken breasts
- Massage yogurt mixture into chicken breasts until fully covered
- Marinate in chicken breasts in yogurt mixture for 30 minutes or more
- Place chicken on baking sheet and brush with remaining yogurt mixture
- Bake for 25 minutes or so, until no longer pink in the center
- Drain any excess liquid and broil for a couple of minutes, to achieve a nice golden-brown color
